Ingredients:

To making salsa verde:

  • Four tomatillos, choose medium size
  • 2 tbsp of vegetable oil
  • One white onion, finely sliced
  • Two tsp of cumin
  • Four cloves of medium garlic, minced
  • One poblano chilli
  • ½ cup of fresh cilantro leaves, chopped
  • Two fresh lime, divided
  • Salt and black pepper to taste

To making the beans

  • One bay leaf
  • A ¼ kilogram of black beans, drained
  • Six corn tortillas
  • ½ cup of water
  • Six eggs
  • One small avocado, divided

Directions:

1For salsa verde. Preheat the oven over high heat. Take a lined baking sheet and layered with foil. Out the poblano chilli and tomatillos. Bake them until the chilli blackened. It takes 15 minutes. Flip out them in some moments. Then. Take a small bowl and add the vegetables inside. Covered with a foil.

2Bake them for 5 minutes. Heat the oil in medium pan over medium heat. Then add the garlic and onion. Cook it for 4 minutes and reach enough tenderness. Next, add the cumin and cook more up to 30 seconds. Remove from the heat. Por the seasoning into a food processor bowl.
