How  to make Pumpkin Cheesecake Streusel Bars

Ingredients:

For the Crust:

  • 300 gr cinnamon graham cracker, crush into crumbs
  • 50 gr white sugar
  • A tablespoon of brown sugar
  • 90 gr melted butter

For the Cheesecake:

  • Two packages of cream cheese
  • 130 gr of white sugar
  • A teaspoon of vanilla extract
  • Two eggs
  • 130 gr canned pumpkin
  • A half teaspoon of cinnamon
  • A teaspoon of pumpkin pie spice

For the Streusel and Topping:

  • 100 gr packed brown sugar
  • 100 gr white flour
  • 50 gr cooking oats
  • A quarter teaspoon of cinnamon
  • 50 gr softened butter
  • A teaspoon of vanilla extract
  • Caramel (can be salted or plain caramel)

Directions:

1To start, heat the oven to 350 Fahrenheit-degree or 180 celsius-degree. Then, prepare a baking pan that has been covered with parchment paper on it. If you have got one, then set this aside for a while and continue to do the next step below.

2Prepare a bowl and fill with the crust ingredients in it, like the cinnamon graham crackers, white sugar, brown sugar and melted butter. Mix these ingredients until they are completely combined, and you can see it turns into a thick dough.

3Put this dough into the baking pan and press evenly. Next, prepare another bowl and combine some ingredients in it, like the cream cheese, vanilla, and sugar. Use a hand mixer to beat these ingredients until they turn smooth and creamy. Also, add the eggs in it and beat again until they are all completely combined.

4Then, put around 300 gr of the mixture into the prepared crust. After that, you can continue to combine the other ingredients into the remaining mixture left in the bowl, like the canned pumpkin, pumpkin pie spice. Next, you can pour this mixture layer on top of the cheesecake layer.

5To make the streusel, you need to get the crust bowl and combine with streusel ingredients, like the brown sugar, cooking oats, white flour, and cinnamon. Then, also add the butter and vanilla in it. Here, make sure you don’t completely melt the butter since it may make the streusel becomes too wet.

Pour this streusel mixture over the pumpkin layer. Bake the mixture for around 50 to 55 minutes until the cheesecake is completely done. Before serving, you need to allow this to cool for around one hour and put it in the fridge for another hour. Top with your favorite caramel topping over the cheesecake.  Enjoy!
